No Bake Carrot Cake Balls

Spring is officially in full swing and I am so pumped.

Warmer weather, blooming flowers, brighter days, carrot cake.

Oh, yes. Carrot cake.

So let's be real, as much as I love the idea of eating carrot cake every day in celebration of spring I don't see that as being very realistic. And the thought of that made me sad. That's when I decided to take matters into my own hands and these carrot cake balls were born. Made from whole foods, a spring snack that you can take with you on whatever adventures you're going on.

Spring cleaning, baseball games, Easter gatherings, long walks; whatever you have going on is a perfect event for this little snack.

Homemade Cashew Milk

Okay guys, I have a new obsession. Homemade cashew milk. How in the world have I went this long without making my own cashew milk?!?

If you've never made your own cashew milk before then you are missing out big time.

I think a lot of the reasons why I never attempted to make milk at home was because it seemed kind of intimidating and time consuming. Making my own milk, who has time for that?! And just... how!?

Well, it's actually very simple and a pretty quick process, too. It's so much creamier than store bought milk. It makes killer teas and is a great addition to oatmeal. But you can never go wrong with drinking it straight out of the bottle either.

I got inspired to give this a shot when I was digging deeper into my stomach issues and realized that a lot of the store bought milks have all kinds of unnecessary things put into them. I thought that maybe that was contributing to my digestion problems so I took matters into my own hands and figured out that making my own milk isn't hard to do after all.

Chocolate Fudge Cupcakes - Gluten Free & Vegan

I've made this recipe a few times now and you'd think that after falling passionately in love with these cupcakes each time I had the pleasure of putting one in my mouth that I'd get tired of them.

Nope. Never happened.

Can you blame me though?

Recipe testing sure is a hard job. But ya know, someone has to do it.

A rich fudge cupcake with decadent peanut butter icing. Easy enough for us all to make. No complicated steps or ingredients. Gluten free and vegan. DANG. You really can't ask for much more than that. 

Roasted Veggie and BBQ Jackfruit Macro Bowl

Coming at you today with a rare dinner recipe. I know it's hard to believe but I do (sadly) eat more than chocolate and peanut butter treats that I share with you guys.

But honestly, bowls like this make me feel SO GOOD. I love eating plants. I want to grow my own garden this year. I've given it a try the past few years but I was never really into it. I didn't know enough and I didn't take the time to take care of my plants. This is the year though. I'm ready to make it happen and the time to start is soon! So exciting.

Today I'm sharing one of my favorite meal prep recipes. I don't have exact measurements for the spices but I wanted to share anyways. The main reason is that I want to help others make cooking more fun. Having a collection of spices and adding in your own while taste testing the food as it cooks is so fun. Sitting down to a warm and delicious meal that you created pretty much all on your own is so satisfying and I want to help you guys cultivate that success. 

If you're not into jackfruit or aren't able to find any (check Whole Foods or your local Asian Market) then you can simply omit it or try the marinade on some tempeh or tofu! I haven't tried it on anything but jackfruit but I'm assuming you could get some pretty good results with either of those protein sources. If you try it out let me know how it goes!

Chocolate Crunch Bites

Sometimes you need a little bit of crunch in your life.

I'm not big into most crunchy foods. Whenever I think of crunchy I think of salty things. I'm more of a sweets person so crunchy doesn't happen too often. But who says you can't have crunchy sweets?

You can, you definitely can.

This is my go to recipe for when I'm craving those potato chips that I don't even care for in the first place. I'm a big fan of potatoes, but in chip form... not my thing. These chocolate crunch bites, totally my thing.

Vegan Caramel Latte

Somehow I've kind of gotten into coffee? By kind of, I mean that as I sit and type this I have a headache and I'm blaming the caffeine because I have never been a strong enough person to handle the caffeine in coffee. I want to be that person. I wanna hang with the coffee crowd. I just don't think my body is into it.

*files coffee as a "sometimes food"*

If you are a coffee person though and your body is like, "YEAH CAFFEINE, YEAH" then this drink is for you. Five simple ingredients and if you're feeling extra fancy you can grab a whisk and get a little foam action going on too. Your coffee, your choice though. I just like to give options!

Oatmeal Breakfast Parfait

As you can probably tell, I'm into oatmeal again. You'll see it on my Instagram as well as here in delicious recipe form. There's just something about eating oatmeal out of a glass that makes it better. Try it. It's a good experience.

Oatmeal is an all or nothing thing for me. I'm either eating it multiple times per day every single day or I'm not having any for weeks. That's how I am with a lot of things actually. I want it all or I don't want it at all.

This is a simple recipe for everyone. I share a lot of chocolate and peanut butter recipes because those are my jam. But I know that everyone's not into that so this is something that we can all share and enjoy. Plus, the oatmeal recipe is super versatile so you can use any toppings that you'd like. Mocha Smoothie - Vegan

I'm not a huge coffee drinker. You'll probably never find me drinking a cup of coffee on it's own. There are times when I want a coffee fix and I find myself buying some cold brew at the gas station randomly after I get off of work. I take it home and think of all the things that I can make with the fresh bottle of overwhelming charcoal tasting liquid. By the time I come up with my new concoction it's later in the evening and I might not be the smartest person in the world, but I know that drinking coffee at 9 p.m. probably isn't the best idea - especially when you're not a regular caffeine consumer in the first place.

So I decide to let it have a sleepover in my fridge next to the kombucha and figure that I'll experiment in the morning. When morning comes you know what's happening, smoothies. Always. And that's how this mocha smoothie was born.
