Healthy Baking!

I've been having a tough time dealing with life lately. I'm so confused about what I want to do and what direction I want to take things. It's all that I think about and I think that's my problem. But I can't help it. I'm unhappy with my job and I just feel trapped.

Enough about that though. I've been doing a little baking lately to take my mind off of things.

This is a single serving blueberry muffin that I made yesterday for breakfast. It was really good. (Sorry about the quality, I snapped this with my phone really quick.)

But this recipe is so easy!

3 tbsp flour (I used whole wheat flour) 1/4 tsp baking powder a pinch of salt 2 tbsp blueberries (I used frozen blueberries) 1/2 tsp vanilla extract 1 tbsp apple sauce 1 tbsp water 1 tbsp sugar (I used Sugar in the Raw)

I just heated my oven to 400 degrees and baked for about 15 minutes. These would be great to make ahead of time for a quick grab and go breakfast or even for a snack!

Beware of this next recipe... It's addicting.

These are two ingredient cookies. So quick and easy to make!

You take:

1 medium banana

1 cup of oats

Mix those together and then shape them in a ball on a cookie sheet. (I suggest using parchment paper too!) Bake for about 10 minutes at 350 and ta da! I added dark chocolate to these for a little flavoring. You could use any berries, nuts, or seeds too! If you're really feeling adventurous you can dip them in peanut butter or honey. Mmmm.

I made 10 cookies with this recipe and they total to be about 40 calories each! You can't beat that. (Unless you eat the whole batch like I did.) But still, it's better than eating 10 chocolate chip cookies!

So there you have it. I hope to continue this healthy baking streak that I'm on. The weather is supposed to start improving so I hope that my mood joins it. We're supposed to reach 50 degrees today. It's crazy that I'm excited about that! But I'll take it. I'm off to get ready for work now though. Hoping for the best!
