Raw Vanilla Cake With Fig Icing

Raw desserts are one of my favorite things to create in the summertime. They're simple, delicious, and cool you down on those sunny afternoons.

As you're all probably well aware, I have a fig obsession. I picked up some dried figs the other day and knew that I had to create something with them. So I began throwing together various things and finally came up with fig icing. Ah, yes. It's as good as it sounds, I promise.

Then of course I figured that I would need something to go with the icing. Well technically no, but I like to create; so I figured why not? Which is how I came up with the recipe for the vanilla cake as well.

Both the cake and the icing are raw, vegan and gluten free. And together they create the perfect dessert. Mmm :)

Vanilla Cake Recipe

3/4 cup cashews
1 tbsp melted coconut oil
1 tbsp agave
1 tbsp lemon juice
2 tsp vanilla extract

Mix together ingredients in a food processor until fully incorporated within each other. Place in a small bowl, pan, or ramekin and place in the freezer to set up while you prepare the icing.

Fig Icing Recipe

5-7 dried figs
10 pitted dates
1 teaspoon vanilla
2 tablespoons water
1/2 tablespoon agave

Blend ingredients together in a food processor until fully incorporated. Spread on top of cake and place in the refrigerator for 2-4 hours.

This recipe serves two (or one if you're hungry ;) ) but can easily be doubled or even tripled to serve larger groups!
