A few weeks ago my dad brought home some apples that he got from the Amish. He came home with boxes of apples. It's been an apple overload around here. But none of us are complaining. Who would?

So what does one do with an abundance of locally grown apples? Well the possibilities are endless, my friends. I've had apples on my oatmeal for days upon days. Switching it up of course by adding various other goodies as well. Juicing apples, baking apples, just eating apples as they are in their natural state, etc. etc. I think you get it.

So today I decided on an apple crisp. You can't go wrong with apple crisp. I think we can all agree on that. Anyways, this isn't your typical apple crisp. This one is gluten free and vegan (obviously), healthy, nutritious, and most importantly, delicious!

Apple Crisp

serves 6-8

Apple Base
7 medium apples of your choice (I used a combination of the apples I have)
3 tablespoons maple syrup
2 teaspoons lemon juice
1 teaspoon cinnamon

Crumble Topping
1 cup flour of choice (I used a gf flour mixture)
1 cup oats (make sure they're certified gf if needed)
1/2 cup maple syrup
3 tablespoon melted coconut oil
1 tablespoon chia seeds
handful of pumpkin seeds (optional)
pinch of salt

Preheat oven to 350 degrees. To make the apple base; wash, peel, cut, and dice apples in a large bowl. Add remaining ingredients and mix until apples are covered. Place in 9 inch baking pan. To make the crumble topping; combine all dry ingredients together and mix thoroughly. Add wet ingredients and mix, mix, mix. Add the crumble topping to the apple base. Bake for 40-45 minutes. Remove from oven, cool slightly, dig in! Enjoy :)

I think this apple crisp is best when warm, so eat it out of the oven or heat it up before serving. You can top this with all kinds of fun things as well! Ice cream, perhaps? Get creative :)
