Sweet Potato Burgers

I have a sweet potato obsession. For a while I'd eat them every day. I knew that needed to stop though because I didn't want them to become something I'd get tired of.

They're just so good. So so good.

I continue to eat sweet potatoes pretty frequently. I've been trying to switch it up and get creative with them though. Food creativity is the best creativity. Don't you agree?! Anyways, I made these sweet potato burgers today. Super cute and these can be used as appetizers or a meal if you want to eat multiples like I do ;)

Sweet Potato Burgers

serves 1

1 sweet potato
coconut oil
hummus
mushrooms

Preheat oven to 425 degrees. Wash and slice sweet potato vertically. Melt coconut oil (approximately a spoonful or two) and cover potato slices with oil. Wash and slice mushrooms and cover with remaining coconut oil. Bake for 20 minutes or until potatoes and mushrooms are cooked completely. Once baked, remove from oven and spread hummus on potato, topping with another potato and mushrooms; continue until all potato slices are made into cute little burgers.
