What I Eat In A Day - Vegan

I don't know about you, but I love checking out "What I Ate" videos on Youtube. I love to get ideas of delicious meals to try and make. I've shared some videos just like that on my Youtube channel in the past and am on my way to getting back into doing so again. 

The winter nights are usually when I spend a lot of time aimlessly browsing social media (such a bad habit) and I decided to start making videos again to spend that time doing something a bit more productive. I like documenting my life and I enjoy creating things so I made it a goal to upload as many vlogs as possible. I don't think I'll be getting one up every day but I'm shooting to have some up more often than before!

Anyways, before you head over to Youtube to watch me do life, let's get to what I typically eat in a day.

BREAKFAST

Banana ice cream breakfasts happen 90% of the time and I love it so much. I made cherry ice cream and topped it with so much deliciousness. Frieda's Produce hooked me up with some dragon fruit and I've been enjoying the fresh fruits that I've had access to lately. They brighten up my dreary winter days!

LUNCH 

For lunch I had leftover Chipotle with extra rice and blue corn Cabo Chips. A very effortless but delicious lunch!

SNACKS

Mango and chocolate covered espresso beans were my afternoon pick me ups! I've been buying mangoes lately and surprisingly getting some perfectly ripe ones. Victory!
I went to Darrin's and took some of his chocolate covered espresso beans too. I used to be very into snacking on them but haven't had them in the longest time. Definitely need to get back into buying them!

DINNER

I have a variation of this meal almost every day. I use rice and kale as the base and add on whatever veggies I'm feeling. Today I went with cauliflower, mushrooms, chickpeas (which I ate most of before I took this picture, whoops) and bbq sauce! So good.


That's all I had for the day! I also want to say that I share what I eat for fun and to show that eating vegan doesn't have to be fancy or expensive. What I eat varies from day to day and the amounts of food that I eat (or show) isn't intended to be a guide for others to use. It's simply a way for me to share a bit more about my foods and my life with you all. Eat what you want and eat as much as you need to fuel your body, always!
