Going Back To Basics - Weekend Diet Experiment

We're getting real today here on Create N Plate. 

I have been struggling lately, big time. 

My digestion has been causing me quite a lot of issues for the past few weeks. I've been really flexible with gluten in that time period which I thought was the culprit of my issues. But now I'm wondering if it's not something completely different.

Back in 2013 I was struggling with the same digestive issues that I've been having lately. I had/have IBS and tried everything to cure myself for years. Finally I removed gluten from my diet and everything improved greatly. Shortly after that I went vegan and solved all of my issues. I thought it was a miracle. I felt so good. It was a huge motivator for me to continue and submerse myself deeper into the vegan community, which has really changed my life.

Anyways, I used to be quite strict with gluten and avoided it at all times. As time went on I began to eat it on special occasions. I didn't have a lot of issue with doing this. So gluten has become a "sometimes food." Over the past few weeks "sometimes" has become more and more to the point that I blamed my gluten consumption for my digestive discomforts. 

I don't think that's the case though.

I honestly think I'm eating too many dark leafy greens and other vegetables.

The main reason that I think this is the issue is because I always said how I didn't care for veggies and didn't eat enough of them. Well, I began to eat more of them in the recent weeks and now I'm having problems.

I've religiously been having kale for lunch everyday along with some other veggies. Then for dinner I'd have a rice dish with more veggies. I thought I was doing great something great for myself. But I was researching yesterday and found some articles about how too many veggies can be a bad thing for people with IBS. So I researched a bit and found enough information to get me thinking that maybe that's my issue.

I don't know for sure if gluten, veggies, a combination of both, or something entirely different is the issue but I'm tired of struggling and feeling sick. I have the next three days off of work (but I'm going to Pittsburgh on Sunday for brunch so technically it'll be two days) and I plan on totally revamping my diet and trying to eat very simple foods so that I can try to help myself a bit.

I'm not going to stop eating vegetables completely. I do know that spinach, carrots, and zucchini are foods that I don't have a problem with at all. So I'll definitely be eating those.

I just feel like since I healed myself from this once before that I can do it again. I don't know what's triggered it to happen again but I'm ready to experiment and find out.

I'm going to be documenting everything I eat and how I feel each day so that I can share it here. I'm excited to give this a go and hopefully feel better soon!

If anyone has any advice, similar experience, etc. I would love to hear it.
