You know how you go to the store sometimes and buy coconut date rolls. You think that you're buying enough for future snacks throughout the week. But then you get in the car and proceed to eat almost all of them on your way home. Does that happen to you or is it only me?

I love grabbing these out of the fridge for a quick snack on occasion or tossing a few on my banana ice cream. If you've never tried to put coconut date rolls on your banana ice cream then you haven't lived!

THE BEST COCONUT DATE ROLLS
makes 10-12
1 1/4 cup dates
3 tablespoons water
1/2 cup coconut shreds
Blend together dates and water until paste is formed. Remove from blender and roll into little rolls. Coat with coconut shreds. I find that wetting my hands allows for me to do roll out the mixture with less stickiness. If you prefer, you can refrigerate mixture for 30 minutes and then roll out.
