This is the second marshmallow themed recipe this month. Getting marshmallow crazy here on Create N Plate. I recently got so many bags of (vegan) marshmallows for super cheap. I go to this discount grocery store that is seriously like the black market of vegan food. There is SO MUCH there that is vegan and gluten free for cheaper than I could ever imagine it being. Some of it is expired or close to expiring but I'm okay with that. It hasn't hurt me to eat things a month or so past the expiration so I'm not stopping now! Haha.
Anyways, I found a ton of vegan marshmallows and I had to buy them. I got home and all kinds of marshmallow related recipe ideas popped into my head. So I'm working my way though them. As much as I wanted to space them out a bit more, I'm so excited about this recipe that I had to share it with you guys right now.
I love to eat these while the marshmallow is still warm. It makes them seem so much more decadent! I think it would also be really fun to make the cookies and then roast the marshmallows on a campfire before smashing it between two gooey chocolate cookies. I actually wanted to do that today but it's snowing outside so that resulted in hibernating and using the microwave instead. But once it's warm again you better believe that I'll be out there doing just that!
CHOCOLATE MARSHMALLOW COOKIE SANDWICHES
makes 5 sandwiches
1/2 cup buckwheat
2 cups dates
1/4 cup cacao or carob powder
2 tbsp coconut water
5 vegan marshmallows
Peanut butter
In your blender or food processor blend buckwheat into flour. Add in dates, cacao/carob, and coconut water. Blend together. Remove dough and cut into circles. I used a glass to do this but a cookie cutter would work as well. You should have 10 cookies. Set aside. Place marshmallows on a plate and warm up in the microwave for just a few seconds. You could also heat them up in the stove or over a campfire but I found the microwave to be easiest at the time. Place marshmallows on cookies and top with remaining cookies. Drizzle with peanut butter. Serve, enjoy!
