Sometimes I'll bake something and eat a ton of it initially. Then a few days pass by and I become uninterested in what was once a very delicious treat. I hate throwing food away and oftentimes I can't find someone to give it to. That's how it went with these cupcakes. I ate some, Darrin ate some, and then I had some left without a good home.
Then the idea popped into my head to make a birthday cake blizzard happen. Oh yes.
Something simple, sweet, a little bit nutritious, and a whole bunch delicious. That's what I was going for here. Sweet cake crumbles dispersed into a cool, creamy vanilla whip. Perfect for that summer birthday or just that celebration of making it through the day. Any day is a good day to whip up a birthday cake blizzard!
BIRTHDAY CAKE BLIZZARD
3 frozen bananas
1/4 cup almond milk
2 tablespoon Sunwarrior Vanilla Illumin8 powder
1 tablespoon oats
1/4 heaping cup frozen cake crumbles (I used this recipe. I crumbled up a few cupcakes and placed them in the freezer.)
Sprinkles
Blend together bananas, almond milk, Illumin8 powder, and oats until smooth. Stir in cake crumbles. Place into glass. Top with cake crumbles and sprinkles, if desired. Serve, enjoy!
