I. Love. Cauliflower.
I do, oh yes, I really do.
It's crazy to think that someone who didn't put a piece of cauliflower into their mouth until they were 22 is such a cauliflower lover these days. But it's true. I'm really into it.
I've been playing with different toppings to roast on it. This recipe is by far my favorite. Cheezy with a hint of chili spiced garlic. I mean, really, it can't get much better than that!
Easy to make, relatively long to bake... but that's okay. It's worth the wait. Trust me.

CHEEZY ROASTED CAULIFLOWER
1 head cauliflower, about 6 heaping cups
3 tablespoons nutritional yeast
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon paprika
Preheat oven to 400 degrees. Wash and cut cauliflower into a large bowl. Add in remaining ingredients and mix until evenly incorporated. Place on large parchment paper lined baking sheet. Bake for 45-50 minutes, or until cauliflower edges brown and can easily be poked with a fork. Remove from oven. Serve, enjoy!
