When I was a kid I was so into rice crispy treats. My grandma would make them all the time and I'd eat one after another. I had that "can't stop won't stop" mentality about about them. As everyone rightfully should.
I grew up eating and loving them. The simplicity of making them and the warm gooey squares with a bit of crunch were a childhood staple. Easy for the lunch box and quick to grab as an afternoon snack. Mmm.
Rice crispy treats are an effortless snack to make at the beginning of the week to last throughout your busy days. I made these in the microwave to expedite the quick factor because being vegan doesn't have to be timely and difficult. Let's make some of these gooey marshmallow squares to prove it!
RICE CRISPY TREATS
5 cups rice crispy cereal
1 bag of marshmallows
1 tablespoon maple syrup
2 teaspoon vegan butter
Combine marshmallows, maple syrup, and butter in large microwave safe bowl. Microwave for 90 seconds. Remove from microwave and stir. Add in rice crispy cereal. Stir until marshmallow mixture coats cereal. Press into parchment paper lined 9x13 inch pan and let cool. Cut into squares. Serve, enjoy!
