I go through so much granola each week that it's probably concerning from an outside perspective.
But here's the deal; I freaking love it. So much.
I've gotten into the habit of eating it while I'm making breakfast in the morning and grabbing it as a snack in the afternoons when hunger strikes and I don't have access to another quick snack. I was going through a bag of it each week. Which isn't necessarily an issue except that it can be pricey. That got me thinking that I should just make my own because why not?! I like simple food combinations. Sure, things with a billion (exaggeration, of course) ingredients in them can be fun but for my everyday foods I like things that are less complicated. Making my own allows me to add anything to my granola. So I can pretty much make any combo that I want. Plus, the main thing, it's way cheaper to do it that way. And that's how this simple cinnamon granola was born.

SIMPLE CINNAMON GRANOLA
2 cups oats
1/2 cup buckwheat groats
1/3 cup shredded coconut
1/3 cup pumpkin seeds
2 teaspoons coconut sugar
1 teaspoon cinnamon
1/4 + 2 tablespoons maple syrup
2 tablespoons brown rice syrup
Preheat oven to 325 degrees. In large bowl combine oats, buckwheat groats, coconut, pumpkin seeds, coconut sugar, and cinnamon. Once mixed add in maple syrup and brown rice syrup. Stir everything together and spread out on parchment paper lined baking sheet. Bake for 30-35 minutes. Remove from oven and let stand for 10 minutes. Serve, enjoy!
