What I Eat in a Day - Plant Based

Hello, friends! It's been ages since I've shared a What I Ate post and I was feeling inspired to do so today. It's fascinating to me to see how much these posts change over time as I learn more about what my body likes and follow what I'm craving. I'm definitely eating more processed foods than I used to and I have my fair share of cupcakes and milkshakes but that's life. I spent so many years avoiding those type of foods because they're not "healthy" and are "bad for you." But you know what, I don't think that's the case at all. I struggled with digestive issues for months earlier this year and I think that a lot of that can be linked back to one factor; stress. I was stressing myself out so much with life and food in general that my body was like NOPE. It took a lot of experimenting for me to see that once I added in the things that I restricted for so long that's when my digestion started to work itself out. 

After that experience I've become a lot more flexible with what I'm eating and it has brought so much happiness into my life. People always say to follow how you feel and eat intuitively but I never really was able to resonate with that until earlier this year and it's been so amazing.

On that note, let's get to the goods!

BREAKFAST

I have been obsessed with quinoa for breakfast lately. It keeps much so much fuller and satisfied than oatmeal and I love the consistency of it too! I topped this with blueberries, strawberries, molasses, peanut butter, and chia seeds.

SNACK

Work snacks this week were banana muffins! I've been on a major muffin kick lately. I've made a batch for work for the past 3 weeks straight. Yum!

LUNCH

I really deserve to pat myself on the back for this meal prepped lunch. Rice, grilled peppers, zucchini, and broccoli all thrown together with a teriyaki sauce. I could eat this for every meal. So good!

SNACK

Post work and post bike ride snack is my favorite kombucha ever with some cotton candy grapes. The perfect combo after the most humid bike ride ever where I encountered two snakes!

DINNER

I've had salads for dinner more often than not lately. Kale, romaine, alfalfa sprouts, strawberries, kimchi, and a remoulade dressing. Seriously my go to. I love how effortless salads are to make after coming home from work and not wanting to make a huge mess in the kitchen. Yay, salads!

SNACK

Pretzels, yessssss. I freaking love pretzels. The perfect way to end the day!
