Hey! It's recipe time. Who's excited?!
I knew that I had to do something special for the first recipe post in 4 months. Is there better way to celebrate than with funfetti waffles?! I certainly don't think so.
Taking a break from creating food recipes for the first time in 4 years has been so good for me. I had to teach myself to let go of the fears that I had surrounding disappearing from the internet for months at a time. As I type that I know how ridiculous it sounds, but the fear is/was real, friends!
In that period of time I did a ton of baking. I looked up recipes from other bloggers that I had saved up for so long and actually was able to use them because I wasn't spending all of my time in the kitchen creating things of my own. So fun! And delicious.
Besides baking, I did a lot of learning too. Both equally important things, ya know.
The most important thing that I learned over the summer is what I really want in this moment. And that is to keep doing what I'm doing here on this site. For a long time I wasn't sure if this was something that I wanted to continue to put my time into, but after taking a break and stepping back I realized that I want to put focus into this space now more than ever.
For a long time I thought that powering through my negative feelings surrounding this site would be how I'd find the answer that I was searching for. It turns out that the opposite was what showed me the light and made things clear. I rarely took more than 2 days off of Create N Plate for years on end and I know now that nothing is sustainable or healthy when you're working at that level of intensity. I think I knew that all along but knowing something like that and admitting that you're doing that to yourself are two completely different things.
Nevertheless, I'm back and I'm here with a new perspective on this work that I create. I'm so excited about it. I'm ready to put out more content and connect with you. I'm exactly where I belong and I'm super excited that you're here too.
Now let's celebrate with some waffles.
FUNFETTI WAFFLES
serves 2
1 flax egg - 1 tbsp flax seed + 3 tbsp water
2 cups flour
1/4 teaspoon baking soda
1/4 teaspoon baking powder
Pinch of salt
1 1/4 cup milk
1 tablespoon coconut oil, melted
2 tablespoon sprinkles
Turn on waffle iron to heat up. Create flax egg and set aside to thicken. In a medium sized bowl add flour, baking soda, baking powder, and salt. Mix. Add milk, coconut oil, and flax egg. Mix everything together until incorporated. Add in sprinkles and stir. Spray cooking spray (I used coconut oil) on waffle iron and fill with batter. Cook. Repeat with remaining batter. Serve with coconut whipped cream, more sprinkles, and whatever else you desire. Enjoy!
