Vegan Blueberry Muffins

Happy Sunday everyone! Sunday's are one of my favorite days of the week. Usually I get up and go for a long run. I don't push myself for time or distance, I just go until I don't want to any longer. Then I make breakfast, today it was peanut butter baked oatmeal, and then I just hang around and do whatever I feel like doing. So I was in the mood for muffins and I made these.

This is one of my favorite recipes. Who likes blueberries and pumpkin seeds? If you answered yes, then you better get into the kitchen right now and whip up a batch of these. These muffins are awesome. They're vegan and healthy too!

Do you ever go to a coffee shop or bakery and see beautiful muffins in the cases, but wish that you could create them on your own as a healthier version? I do! And so that's exactly what I've done here.

Vegan Blueberry Muffins

2 cups whole wheat flour
2 teaspoon baking soda
2 teaspoon cinnamon
1/2 teaspoon salt
1/4 cup lemon juice
1/3 cup agave
1/4 cup sugar
1/4 olive oil
2 flax eggs or actual eggs
1/2 plain greek yogurt
1 cup blueberries
1/2 tablespoon chia seeds
1/4 cup pumpkin seeds

Mix flour, baking soda, cinnamon, and salt together in a bowl. In a separate bowl mix together remaining ingredients excluding pumpkin seeds. Once mixed completely, mix together wet and dry ingredients. Distribute mixture into a muffin pan and sprinkle pumpkin seeds each muffin. Bake at 350 degrees for about 20 minutes. Then enjoy!

You should get about 12 muffins out of this recipe. And I recommend eating these right out of the oven or warming them up before eating them. Warm muffins are the best muffins! As you can see, I couldn't even wait until I was done taking pictures of these to dig in. ;)
