Ice cream is my favorite thing. When I was in high school I used to always go to McDonald's or Burger King and get their 99 cent cones. Cheap ice cream was where it was at. Actually, I was excited for anything cheap then. It didn't matter what time of day or even what time of year it was. I was ready for ice cream anytime. Oh how times have changed! Not with the ice cream, of course. I'm still ready for it any day, time, or place. But the days of McDonald's and Burger King's ice cream cones are a thing of the past. I mean who really wants to eat ice cream made from Dairy Milk, Sweet Whey, Nonfat Milk Solids, Corn Syrup Solids, Mono- and Diglycerides, Dextrose, Sodium Citrate, Sodium Phosphate, Carrageenan, Disodium Phosphate, Cellulose Gum, Vitamin A Palmitate? Any takers out there??

Now that we're all on the same page of loving our ice cream and caring about what we put into our bodies; I present to you Mocha Chip Ice Cream. Four simple and easy to pronounce ingredients as well as an infinite amount of happiness while eating it. Cashews, coffee, maple syrup, and chocolate. Oh and lots of love and care as well. So I guess that makes it six ingredients. But still, that's a lot better than Carrageenan and Nonfat Milk Solids, right?!
Now on to the most important thing though; the recipe.
Mocha Chip Ice Cream
serves 4-6
1 and 1/2 cup cashews, soak for 2 hours
3/4 cup brewed coffee, chilled
1/4 cup maple syrup
Chocolate
In blender or food processor, blend together cashews, coffee, and maple syrup until liquid mixture is formed. Pour into a shallow pan or bowl and place in the freezer. Make your chocolate. Pour a little bit of the chocolate into the icecream and stir around. Do this every 30 minutes or so until ice cream is solid. Remove from freezer, serve, enjoy!
