This is one of my favorite meals. Well making zucchini noodles/pasta/lasagna/etc. is my favorite. It's so good. So many positives come from this meal! These noodles don't leave you laying on the couch feeling lethargic for hours to come. But they are filling but filling in a way that makes you ready to do awesome things like competing in your favorite Olympic sport or making an awesome dessert like a brownie ice cream explosion.
There are so many different things you can top your zucchini noodles with. One of my favorites is cheesy sauce. That's probably because I used to be a big mac and cheese fan. Ah, the memories. I used to live on boxes of mac and cheese shaped as my favorite cartoon characters. This is like a raw vegan version of my favorite childhood favorite.
What's really great about this is that you have the power to make this as spicy, garlicy, cheesy as you'd like. Yay for variety!
Cheesy Zucchini Noodles
serves 4
2 medium zucchini
Using a mandolin slicer, slice zucchini as thing as you're able to. If you don't have a mandolin slicer, a basic grater will work fine. After slicing zucchini's, set aside.
Cheesy Sauce:
2 tablespoon olive oil
2 tablespoon nutritional yeast
1 tablespoon lemon juice
pinch of salt
garlic powder (optional)
red pepper (optional)
Combine all ingredients and mix together. You can add as much or as little garlic and red pepper as you'd like.
Top zucchini noodles with cheesy sauce.
