Vegan Chocolate Peanut Butter Popcorn Bars

Wooow. The weather the past few days has been so great. I mean, yesterday it was 50 degrees! So exciting. I spent a great deal of time hanging outside and enjoying the sunshine. I even got to go for a run in a t-shirt. Ahh-mazing. I bought a plant the other day too, just because I'm anticipating the upcoming months of warm weather. Who wants to take bets on how long it will survive under my care? I'll give you  a hint by saying, don't guess a large number because it's almost pathetic how bad I am with plants and gardening. I'll keep you updated on the plant though. Check back!

I don't want to get too excited for Spring yet though, because it's currently snowing. But I did feel the need to celebrate the nice weather that I did get to experience. Is there really a better way to celebrate than with Chocolate Peanut Butter Popcorn Bars?! I don't think so.

The chocolate layers are a soft and gooey base to hold this glorious creation together. Basically the most important part; the backbone of the popcorn bar. Combine the decadent chocolate backbone with peanut butter popcorn and experience your taste buds blossom into beautiful spring flowers. You will be standing in your kitchen wondering where these little guys have been all of your life; almost like a missing puzzle piece. No need to wonder any longer, because they're here. Popcorn party!

Chocolate Peanut Butter Popcorn Bars

serves 8

2 cups dates
3 tablespoons cacao
1 teaspoon coconut oil

2 cups popcorn
Peanut butter
Chocolate

Combine dates, cacao, and coconut oil in blender or food processor. Roll out onto parchment paper; making two 5x5 inch squares. Set aside. Mix together 1 cup of popcorn and a spoonful of peanut butter. Top one square with peanut butter popcorn. Place other square on top of popcorn. Top with remaining cup of popcorn; drizzling with peanut butter and chocolate. Cut into 8 squares. Serve, enjoy!
