These cookies are basically a lot of my favorite snacks combined together to create one of my new favorite new things; cashew cookies with caramel peanut butter frosting. Yes please! These little guys are really quick and easy to whip together and even quicker to disappear. *runs to the kitchen and eats 3 of them* Mmm. Now that I'm back let me tell you a little bit about what to expect here. First you have the cashew cookie. Yeah, it tastes a lot like cashews; surprise! But honestly, what's not to love about cashews?! The flavor isn't too strong though, there's a hint of cinnamon and sweet sugar as well; creating a taste equivalent to enchanted forest. That's right, these cookies taste like a forest. Try em' and you'll agree. Anyways, we didn't even get to the best part yet. So I hope you're still with me here and not already in the kitchen scavenging for ingredients. Patience is key, my friends. Okay, so back to the thing that matters most. Caramel peanut butter frosting. Mmmm-my goodness. Top your cookies with this frosting and your enchanted forest of flavors will turn into a jungle of enchanted flavors. Soft, chewy, delicious. Cashew Cookies with Caramel Peanut Butter Frosting
makes 16-18 cookies
Cookies:
2 cup dates, pitted
1 cup cashews
2 teaspoons almond butter
2 teaspoons chia seeds
2 teaspoons cinnamon
2 teaspoons coconut sugar
In blender or food processor, blend together all ingredients until dough forms. Roll out small/medium balls on parchment paper and press down creating your cookies. Set aside and make frosting.
Caramel Peanut Butter Frosting:
1/2 cup dates, pitted
2 tablespoons water
2 tablespoons peanut butter
Blend together ingredients until a smooth fluffy texture is created.
Frost cookies with caramel peanut butter frosting and top with chia seeds if desired. Kind of like sprinkles! Serve, enjoy!
Store in refrigerator for up to 7 days.
