Ginger Cauliflower Rice

Guys, hi. I have a new favorite thing. Wanna guess what it is? Yes, no? Well I'll tell you regardless. Cauliflower rice. Wow wow wow. Here's the thing, I don't even like cauliflower. I feel like I'm saying that a lot. Don't like bananas, eat around 6 or 7 everyday. Don't care for salads, order salads when out to eat. Don't like cauliflower, use cauliflower for everything. You know; pizza crusts, "mashed potatoes," wings, rice. It does it all. A magical vegetable.

This rice was actually inspired by a dish available at my absolute favorite restaurant in Pennsylvania; Eden which is located in Pittsburgh. They have a portobello burrito with cauliflower rice that I have gotten a couple of times now and each time I am blown away by how amazing it is. Everything there is amazing. I should do a full review on it. Hmm. After they release their Spring menu it's happening. Anyways, the cauliflower rice there isn't really like this at all. But it was my main inspiration, so if you're in the area get there and grab the burrito and rice.

On to the important details of this post, though. This cauliflower rice is seasoned with ginger (obviously), turmeric, cilantro, and cayenne pepper. Simple, yet so delicious. You get a little bit of crunch and an soothing earthy flavor. I sautéed this rice to distribute the flavors, but if you'd like to eat the cauliflower rice raw then it's totally good that way, too!

Ginger Cauliflower Rice

serves 2

1 head of cauliflower

1 tablespoon coconut oil
1 teaspoon ground ginger
1 teaspoon turmeric
1/2 teaspoon cilantro
A pinch of cayenne pepper

Wash the cauliflower and break it into large florets. Lay out on paper towel to dry out for a while or pat them dry. Break the florets into smaller pieces and put half of the cauliflower into the food processor. Pulse until it is finely chopped. Don't over do it! Repeat with remaining cauliflower. If you don't have a food processor, you can use a cheese grater to shred the cauliflower. Once your cauliflower is shredded, melt coconut oil in a frying pan. While coconut oil is melting, combine ginger, turmeric, and cilantro together; set aside. Pour cauliflower and seasonings into pan and sauté, stirring frequently. Cook until cauliflower turns light brown and remove from heat. Serve, enjoy!
