Hi friends! I am so excited for life these days for two reasons. I've been fueling my body with lots of awesome vegan foods (carbs!) and spending lots of time outside soakin' up the small amount of sun that we've been getting. Doesn't get any better than that, right? I recommend both of those things to all of you. You can all benefit from an abundance of both of those things and it's great! Okay, let's get down to business because these cookies need all of our attention. You have your cookie dough and you have your chocolate dough. Smash 'em together and you get these beauties. Sweet, sugary, healthy, happiness. Make these for your friends and sit outside along a riverbank while snacking out them and all will be well. Healthy, happy, cookie sandwiches. Yesss.
Chocolate Cookie Dough Sandwiches
makes 8 cookie sandwiches
Cookie Dough:
1 cup dates
1/2 cup oats
1 tablespoon coconut sugar
1 teaspoon vanilla
1 tablespoon cacao nibs
In your food processor or blender, blend together everything except cacao nibs. Remove dough from blender and stir in cacao nibs. Set aside.
Chocolate Dough:
2 cups dates
1 tablespoon hemp seeds
1 tablespoon cacao powder
1/2 teaspoon coconut oil
In your food processor or blender, blend together ingredients.
Roll all of the dough into small to medium sized balls. Create cookie sandwiches by combining the balls and pressing them together. Serve, enjoy!
