Happy Tuesday! I wasn't feeling the greatest yesterday so I just lounged around and was very unproductive. Totally okay though, everyone needs days like that once in a while! This morning I woke up ready to be productive so I went into the kitchen and created these babies. Mmmm!! I love creating recipes because I usually go into it with a certain thing in mind but that rarely ever happens. The end result is usually much better too! That's what happened today and I'm really glad it did!
It's so fun to go into the kitchen and create all kinds of things, isn't it?! It's really quite amazing that you can make so so many different foods by combining various foods together. Ahh, I appreciate it so much! Appreciate the little things, my friends. It's exciting!
These chocolate coconut squares have a chocolate icing and a gooey coconut base. It really can't get any better than that, can it?! They're very easy to make, like most things I share, and even easier to eat all in one sitting! Let's do it.
Chocolate Coconut Squares
makes 8 squares
Coconut Base:
1 cup dates
1/4 cup shredded coconut
1/4 cup coconut water
1 tablespoon maple syrup
Blend all ingredients together in blender and shape into small/medium sized squares. Set aside.
Chocolate Icing:
1/2 cup dates
2 tablespoons maple syrup
2 teaspoons cacao powder
Blend all ingredients together in blender. Spread on top of coconut squares. Serve, enjoy!
