Hey all of you beautiful people! I have a great recipe to share today. I debated on if I should share it or wait a while. Why did I debate something like that? I have no idea! I want to share as many things as possible with all of you and the more I share, the more I'm motivated to create more. So here we are for another recipe. Woo!
I'm on a slight peanut butter kick lately. I hope that's okay with all of you. If it's not, then please stay tuned for future posting because I promise that not everything in the upcoming posts will have peanut butter in it. Anyways! I've been doing a high carb diet for a few months now and lately I've just been wanting a few more fats in my diet. (Listen to your body!) So I dusted off my peanut butter jar and broke into it again. Mmm. I can't eat as much as I used to, simply because just a little is satisfying to me now. But I'm enjoying having a bit of it back in my life!
I made these Chocolate Peanut Butter Oat Bites to snack on throughout the day... if they last that long. They remind me of no bake cookies, only better! They're 5 simple ingredients that you just blend together and let the magic happen! It's so easy that I know that you'll all be able to do it. I believe in you! So let's get started!
Chocolate Peanut Butter Oat Bites
makes 8-10 medium bites
1 cup dates
1/4 cup + 1 tablespoon oats
1/4 cup maple syrup
1 tablespoon cacao
Peanut Butter
In your blender or food processor blend together the dates, 1/4 cup oats, maple syrup, and cacao. Remove from blender and roll medium sized balls. Once balls are rolled, toss them in remaining 1 tablespoon of oats and drizzle with peanut butter. Serve, enjoy!
Store in the refrigerator for up to 7 days.
