Hi friends! How are you doing!? It's been too long since I've posted. I'm sorry! I'm working on finding some balance between my "real job" and sharing with all of you. Give me some time and I'll figure it out! I have lots of recipe ideas and a few craft ideas to share in the future. Stay tuned! I'm also working on procrastinating less. I have literally been working on this recipe on and off this whole day. If I would just do it then I would have been done hours ago! Anyone else like that? If so, you know the struggle!
Anyways, I ate almost this whole thing today. I just got up to have another one because I can't talk about them and not enjoy them at the same time. What fun would that be?! I have a couple left, but just couldn't help myself. They're SO GOOD. I love a good granola recipe. Granola of any type is so addicting. I just shovel it into my mouth. No regrets! I don't remember the last time that I bought granola in the store. What fun is that? Plus it's usually full of added sugars and stuff that we don't need and it's kind of expensive. No thank you. And that's why this granola was born. I didn't want to share just a plain ol' granola recipe tonight though. I've went a week without posting on here, so I had to amp it up a bit! You deserve better than that! That's why I filled these granola bars with chocolate banana ice cream. Can I get a heck yeah?! *Heck yeah!!*
Granola Chocolate Ice Cream Sandwiches
makes 5-6 sandwiches
Granola Recipe:
2 cups oats
1 cup dates + 1 cup water blended together
1/2 cup maple syrup
1/4 cup nuts of choice
1 teaspoon cinnamon
1 teaspoon vanilla
Preheat oven to 350 degrees. In a large bowl, combine all ingredients and stir together. Pour granola onto parchment paper lined cookie sheet. Press down until granola is about an inch thick. Bake for 15-20 minutes. Remove from oven and cut into squares. Set aside.
Chocolate Banana Ice Cream:
3-4 frozen bananas
1 tablespoon cacao powder
Drop of water
In blender, blend together ingredients until smooth. Spoon out onto half of the granola squares and top with remaining squares.
Top sandwiches with peanut butter, cacao nibs, or anything else you'd like. Serve, enjoy!
