These are a perfect snack food. Snacks are awesome, aren't they?! I love to take snacks to work but lately all that I've been taking are apples and dates. Don't get me wrong, there is nothing wrong with either of those. Actually, everything is right about apples and dates. But day after day they become a lot less exciting to me. I want to switch things up. Variety is the spice of life, ya know!? So I made Peanut Butter Bliss Granola Bars to take. They're life changing when it comes to snacking. I promise you that.
Here's why.
I made regular peanut butter bliss balls that I just didn't really know what to do with. They were great. But they deserved more than just being plain ol' bliss balls. I made a batch of cinnamon granola, super easy with only 3 ingredients, and smashed the bliss balls between the granola to create one of the best granola bars that will have the honor of hitting your taste buds. If you eat these while they're warm then they're so so blissful. But if that's not possible then they're still pretty dang good just how they are.
Snacks are great. Peanut butter is great. Granola is great. Add them all together to create the ultimate party in your kitchen (and your mouth).
Peanut Butter Bliss Granola Bars
makes 8-10 bars
Peanut Butter Center:
1/2 cup oats
1/4 cup buckwheat
1 cup dates
1/2 cup dried figs
1/2 cup peanut butter
1/4 cup walnuts
1/4 cup almond milk
1 tablespoon shredded coconut
Blend together oats and buckwheat until a flour is formed. Add remaining ingredients and blend until smooth. Set mixture aside.
Granola: 2 cups oats
3/4 cup maple syrup
1 tablespoon cinnamon
Preheat oven to 350 degrees. Mix together all ingredients and spread out onto a parchment paper lined baking sheet. Bake for 15-20 minutes.
Press peanut butter mixture onto half of the granola. Take the remaining half and press on top of peanut butter mixture. Once cool, cut into bars. Serve, enjoy!
