Did you guys know that the Jurassic Smash Blizzard is a thing at Dairy Queen? I had no idea until a lovely friend/reader suggested that I make it veganized. I checked it out and immediately knew that it needed to happen. Anything calling for peanut butter cookies, chocolate chip cookie dough, peanut butter, chocolate chunks and vanilla soft serve is something I am totally interested in.
This was my lunch today. Yep, yep, yep. Being vegan and eating tons of plants totally means that you can eat an ice cream blizzard for lunch and still reap nutritious benefits from it. That's totally a win, win for me!
Jurassic Smash Blizzard
serves 1-2
Cookies:
2 cups dates
1/2 cup almonds
1/4 cup oats
2 tablespoons maple syrup
1/3 cup peanut butter
1/4 cup cacao nibs
Blend together all ingredients except cacao nibs and peanut butter. Separate the dough into two separate bowls. Add cacao nibs to one bowl and mix in. Add peanut butter to the other bowl and mix in.
Ice Cream:
4 frozen bananas
1/4-1/2 cup almond milk
1/4 cup chocolate cookie dough
1/4 cup peanut butter cookie dough
Blend together bananas and almond milk until smooth. Add in cookie doughs and blend until evenly distributed. Scoop into cups and top with extra peanut butter, cacao nibs, and cookie dough pieces. Serve, enjoy!
You will have extra cookie dough. Store in fridge for up to 7 days and make more blizzards with remaining dough!
