I've been making so many pancakes lately. Darrin and I have been on a pancake kick. We've tried so many different pancake recipes and failed miserable at each and every one of them. I honestly don't understand what happens but we can't make pancakes together. Actually we can't really make many things together for some reason. But that's a whole other story! I've really been wanting to share a pancake recipe with you guys though. A fun fall recipe actually. It's been a while! So I've set out to make this dream come true on my own. It was no easy feat, but alas I have arrived at pure pancake bliss.
These pancakes require simple ingredients that I imagine you'll already have in your kitchen. There is nothing better than finding a recipe you want to create and realizing that you already have all of the ingredients, right?! I love when that happens and I love when delicious pumpkin pancakes happen. When you're cooking these little guys your kitchen will be filled with the most warming and comforting fall aroma. It'll make you want to grab some tea and sit down with these pancakes and a horror movie. I actually see that happening in my near future now that I mention it. I hope it happens for you too!
Pumpkin Pancakes
serves 2-3
2 cups oat flour
1 + 1/4 cup almond milk
1/2 cup pumpkin
1/4 cup maple syrup
2 teaspoon pumpkin pie spice
Preheat griddle to medium heat. Mix all ingredients together in large bowl. Pour batter onto greased pan. Cook for a few minutes on each side until browned. Top with fresh apples and cinnamon. Serve, enjoy!
