Rarely a day goes by that I'm not eating some type of potatoes. If eating potatoes was a problem, then I'd be in deep. Luckily though I can eat potatoes all day long and receive only good things from them. Yes, this is basically a potato appreciation post.
I started a new workout routine this week. I rejoined the gym after a lot of time away. I quit going last spring because who wants to workout inside when you can do it outside? Living in Pennsylvania doesn't allow for outside workouts to happen year around sadly, so I'm back to lifting. I enjoy it a lot and it's nice to get back at it. But holy wow have I been hungry this week. I can hardly keep up with all of the food I've been eating! Seriously! I eat a lot in general because I'm pretty active and fueling your body is important but this is a whole other level of eating a lot. No complaints though. I'm loving it and taking full advantage of the hunger by making some awesome spur of the moment recipes like these spicy sweet potatoes. There's really nothing better than a delectable, warm sweet potato right?!
Spicy Stuffed Sweet Potatoes
serves 2
2 large sweet potatoes
Preheat oven to 400 degrees. Poke holes in sweet potatoes and bake for 60 minutes. While sweet potatoes are baking prepare spicy curry and sauce.
Spicy Curry: 1 1/2 cup sweet onions, diced
1 clove garlic, minced
1/2 cup water
1 cup edamame
1 can chickpeas
2 1/2 teaspoon cumin
2 teaspoon turmeric
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 teaspoon cayanne pepper
1/4 teaspoon basil
Pinch of salt
Romaine Lettuce
Add a bit of water to a skillet and place on low heat. Add onions and garlic to pan and sauté until onions soften. Add in remaining ingredients except romaine lettuce and cook on medium heat until water disappears and onions, edamame, and chickpeas are coated with seasonings.
Cheesy Sauce: 1 tablespoon almond milk
1 1/2 tablespoon dijon mustard
2 teaspoon nutritional yeast
Pinch of salt
Stir together ingredients.
Slice baked sweet potatoes open and place a bed of lettuce inside. Add spicy curry on top and then pour cheesy sauce on sweet potato as desired. Serve, enjoy!
