Today we're going back to an old favorite of mine; chips and dip! But instead of eating some dairy filled dip with some nutrition lacking chips we're kicking things up a notch. Sweet potato dip is one of my new favorite things. I could probably just eat it on it's own honestly. But what fun is that? Probably not much fun at all so I paired it with my absolute favorite chips in the world.
Story time! On this day I walked downstairs after making the post about leaving the internet for a bit and found a box of Cabo Chips. I looked at the box and I couldn't believe that they happened to arrive on that day. It was like a sign that I needed to keep going with things. I was so emotional over this box of chips that arrived at my door. I immediately starting thinking of ways that I could incorporate them into recipes and keep things happening here on the blog. And that's exactly what I did!
I opened the box of chips that day and was blown away by how good they are. Seriously! I was running around making everyone try them too. I could eat a whole bag of these in no time and I might have done that once... or twice.
I paired this dip recipe with the Ancient Grain chips. I love how the nutty lime crunch compliments the warm sweet potato dip. So good!! Sweet Potato Dip + Cabo Chips
2 cups mashed sweet potato (about 2 large sweet potatoes)
1/2 cup almond milk
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/4 teaspoon nutmeg
1/4 teaspoon cumin
1/8 teaspoon cayanne pepper
Salt, to taste
Pepper, to taste
1 bag of Ancient Grain Cabo Chips
Combine mashed sweet potato, almond milk, garlic powder, paprika, nutmeg, cumin, cayanne pepper, salt, and pepper in blender. Blend until dip is smooth. Serve with 1 bag of Ancient Grain chips, enjoy!
