Peppermint time! I used to be obsessed with candy canes. Obsessed. I'd eat them so often all month long and then I'd stock up on them the week after Christmas and make them last all through February. Now that my diet has changed drastically I don't care for candy canes as much but I had to make peppermint cookies for the holiday's!
Seven simple ingredients and about 45 minutes in the kitchen can provide you with this tasty holiday treat. I love taking these to work and snacking on them throughout the day. I usually take them and eat one ever hour. It keeps me full throughout the day and keep me excited for the time to pass!
Only 10 days until Christmas so let's get moving and make some cookies! Peppermint Cookies
makes 6-8 cookies
2 cup oats
2 bananas
1 tablespoon coconut sugar
1/2 teaspoon peppermint oil
1/4 teaspoon baking powder
1 vegan candy cane, crushed
1 vegan chocolate bar, melted
Preheat oven to 350 degrees. Blend oats into a flour and add in bananas, coconut sugar, peppermint oil, and baking powder. Spoon out onto parchment paper lined baking pans. Bake for 10-15 minutes until bottom beings to darken. Remove from oven and top with candy cane pieces and melted chocolate. Serve, enjoy!
