Peanut Butter Power Bites

It's been so long since I've made a recipe to share! I took about a month off from recipes unintentionally. But I'm easing back into it and when I was in the kitchen making these this morning I was so happy. It felt right! During this whole lack of recipe creating in my life I have been trying out recipes from other people. I'm cooking now more than ever before. It's interesting! I'm having fun with it and laughing at all of the failures that end up being a slightly dreaded lunch at work the next day. I don't know if I'm sensitive to hot stuff or what, but some of the recipes I've been making are so hot that I can hardly stand it! 

But there's no worries of these peanut butter power bites being too hot. They are a combination of gooey, sweet and protein packed snacks for on the go. Can't go wrong with that! They're easy to make and take with you on your way to the gym or adding them to your oatmeal and banana ice cream!

Peanut Butter Power Bites
makes 6-8 bites

1 1/2 cup dates
1/4 cup buckwheat
1/4 cup cashews
2 1/2 tablespoons pb2 powder

Blend together all ingredients until smooth. Roll into medium sized balls. Serve, enjoy!
