I am a big fan of waffles. 99% of the time when I'm consuming waffles it's happening at Eden while brunching with Darrin. Those days are always the best days and I cherish them. But sometimes I feel like I need to make my own waffles at home too.
That's where this recipe comes in.
This waffle batter is super simple to blend together. You'll most likely have all of these ingredients in your kitchen already. The recipes that I don't have to run out to the store to grab ingredients are often my favorite recipes. There's nothing worse than searching Pinterest for a dinner recipe, coming across something amazing, and realizing that you don't have that one uncommon ingredient that you need to go get to make the recipe successful. The struggle!
But we don't have to worry because that's not happening here. It's all good. And it'll be so much better once you've made and are eating these fluffy vegan waffles.
EASY VEGAN WAFFLES
serves 1-2
1 cup oats
1 banana
1 cup almond milk
1 teaspoon cinnamon
1/2 teaspoon baking powder
Preheat waffle maker. Blend oats in blender until flour forms. Add in remaining ingredients and blend until ingredients are combined. Pour into greased waffle maker and cook until browned. Repeat process. Top with your favorite ingredients. I chose kiwi, almond butter, cacao nibs, and maple syrup. But the possibilities are literally endless! Serve, enjoy!
