Gooey Peanut Butter Brownies

If you're into gooey brownies like me but it's 90 degrees everyday and you don't feel like firing up the oven then these are the brownies for you. 

I have a strange relationship with chocolate things. I used to be quite uninterested in most things chocolate. But in the recent past I became OBSESSED with it. I had a pretty impressive stock of chocolate in my kitchen. Now I'm somewhere in between the uninterested and crazy obsessed stage. I think it's a pretty good place to be.

The other day I was wanting something chocolatey and these brownies were born. I figured I'd go wild and crazy and add some peanut butter icing to them as well. It's really a beautiful thing. You can put plant foods together in a blender and create delicious explosions of flavor. It's the little things like this that matter most.

GOOEY PEANUT BUTTER BROWNIES

Brownies:
1 1/2 cup dates
1/4 cup almonds
1/4 cup cacao powder
1 tablespoon ground flaxseed

Peanut Butter Icing:
1/2 cup dates
1/4 cup + 2 tablespoon powdered peanut butter
1/4 cup coconut water
2 tablespoons shredded coconut

Blend together brownie ingredients. Remove from blender and shape into squares or press into parchment paper lined pan. Set aside. Blend together peanut butter icing ingredients until smooth. Top brownies with icing. Serve, enjoy!

Store in refrigerator for up to 7 days.
