Okay, this is one of my favorite recipes that I've made in a while. Some of my favorite things all smashed together to create an amazing thing.
This recipe just came to me. I wasn't even planning on making a recipe this particular day but I walked into the kitchen, grabbed some ingredients, and started creating. I think that's magical.
I've been putting a lot of effort into things lately and not really getting the results that I wanted. So I took a break; read a lot of books, practiced yoga, and attempted to just do nothing. Doing nothing is much harder than it sounds, by the way. I thrive on lists full of things that I can check off each day. Not having a list of things to get me through from the moment I wake up until the moment my head hits the pillow was a tough deal for me. But so very good at the same time. So anyways, I take this break and do these other things with no plan of stepping back into the kitchen or onto the blog consistently any time soon.
But I surprised myself and here I am some delicious treats on my plate. I was taking these photos and in disbelief that on a whim I created something that I was genuinely pleased with.
And that's what got me thinking deeper into things. I was working through force and resistance for so long now. Instead of moving with a sense of ease and gentleness I was being rough and rigid. Sure, I created some good things and put a lot of work into them but it didn't come from the right place.
Once I took a break and let myself breathe for a bit then things started coming back to me. No force, just easygoing vibes flowing. So good.
Speaking of so good, these peanut butter chocolate pretzel bombs. Oh man, mmmm. The center is a gooey coconut molasses truffle sandwiched between two pretzels and coated with chocolate peanut butter.
Pure bliss.

PEANUT BUTTER CHOCOLATE PRETZEL SANDWICHES
1 1/2 cup dates
1/4 cup cacao powder
1 tablespoon coconut water
1 tablespoon molasses
2 teaspoons shredded coconut
Pretzel twists
1/2 cup powdered chocolate peanut butter
4 tablespoons water
3 squares of chocolate of choice
Peanut butter
Blend together dates, cacao powder, coconut water, molasses, and coconut until smooth. Roll into small balls and sandwich between two pretzels. Set aside. Mix together powdered chocolate peanut butter and water. Cover pretzel sandwiches with chocolate peanut butter. Melt chocolate squares and drizzle chocolate on top as well as on extra pretzel twists to top. Drizzle with peanut butter, too. Serve, enjoy!
Best consumed immediately but can be stored in refrigerator for up to 7 days.
