Raw Vegan Pizza

Pizza party! That's right, you're all invited to join me in a raw vegan (and gluten free!) pizza party. Actually now that I think of it, this pizza is nut free too. Pizza for everyone! Yay. I've been wanting pizza for a while. I can't remember the last time I had a good pizza. So this is long overdue. This pizza isn't like one that you'd get from Pizza Hut or Papa Johns. You won't be stuck on the couch for the next 5 hours. Nope! I bet you'll be outside hiking mountains and swimming oceans. You really could! But if you're going to swim, you should probably wait at least an hour... Anyways! I ate the whole thing plus an mini one that's not pictured here. Soooo good. Mmmm.

Since the crust is dehydrated it takes quite a while to "cook." I underestimated the time that I would need by a long long time. I suggest throwing this baby in the dehydrator before work and coming home to finish your beautiful pizza masterpiece. But hey, it's your pizza; your rules. Do whatever your little heart desires; as long as your heart desires this pizza, then your in a good place.

Raw Pizza

serves approximately 2

Crust:
3 cup zucchini, diced
2 1/2 cup vine tomatoes, diced
1/2 cup red onion
2 tablespoon flax seed
1 teaspoon minced garlic
1/2 teaspoon cayenne pepper
Pinch of Himalayan salt

In blender or food processor, blend together ingredients. Spread crust out onto a lined 20" round pan. Dehydrate for 9 hours at 110 degrees.

Sauce:
2 medium tomatoes
1/4 cup red onions, diced
1/4 cup green peppers
1 clove of garlic
Pinch of Himalayan salt

Blend together all ingredients in blender or food processor until smooth.

Spread sauce onto crust and top with your favorite toppings. I used grape tomatoes, green peppers, avocado, spinach, and nutritional yeast. Serve, enjoy!
