Hey guys! Welcome back to another week of delicious foods all packed into one day! I ate a lot of similar things today that I did last week, but that's just because this is all so dang good! I do kind of wish that I would have documented yesterday's intake to share because it was fully raw and fully awesome! Maybe I'll do that next week! Something to look forward to, right? Actually, there's lots to look forward to. I have a delicious recipe coming up and also a "Eating Vegan on a Budget" post. Who's excited?! Do you guys have ideas of what you want me to post about? Let me know! Anyways, back to the important part; the food. If you want to watch the video version you can check it out here. Breakfast: 1/2 of a watermelon
We all know how much I love love love watermelon. I am not ready for summer to be over and watermelons to go away. Our relationship blossomed into something beautiful over the past few months and I talk about it at least twice a day. It's so awesome before and after a workout! I feel so good eating watermelon pre and post workout I can't get over it. Try it and love it! I also have some watermelons growing in the garden and it's such a beautiful and awesome thing. I check on the little guys everyday and I may or may not be taking "progress pictures."
Lunch: 10 bananas, coconut water, spinach
This is a typical lunch for me. I have it or a variation of it almost every day. Gettin' in my greens! Spinach is my favorite green to put in smoothies. I use arugula and kale on occasion but I just like spinach so much better. Oh, and coconut water is so much better than regular water in smoothies. Don't ask me how or why, but I swear that smoothies taste better with coconut water. Give it a shot!
I also had a few medjool dates in the afternoon that were just calling my name. I snacked on them while I did some work and they were some of the sweetest sugary dates I've ever had. Mmm!
Dinner: Rice, edamame, zucchini, carrots, broccoli, potatoes, oregano, & basil
I made this variation and shared it with you guys for the first time last week. I've been using it ever since. It's an easy way for me to eat more veggies and enjoy them! So good. I add things that I love like potatoes and rice to things that I don't necessary love and mix 'em together to get the best of both worlds. It's all about doing what works for you and finding little tips and tricks to help you out! What are some of your favorite veggies and ways to eat them? Share it with me!
