Hello there! I'm coming at you today with a recipe. It's been a while! I was so happy while making this too. Creating good foods to share with you is what I enjoy. I love when you guys tag me on Instagram with something that you've made or email me pictures of stuff. It all is so great and I appreciate it. That's one reason why I absolutely love getting into the kitchen and putting things together to see what I can create to share. Today I had a vision and that vision was brought to life to be ten times more delicious and awesome that I ever dreamed. Yes!! So, I know that it's only August, and at the same time I can't believe it's already August!! But anyways, August is a little early for fall themed foods, right? That's what I was thinking when I put this together. Then I realized that it's totally okay. I mean, sometimes during those chilly fall days, the last thing that you want is some ice cream. But during these warm summer days that's one of the only things on your mind. Well here it is!
I was at the store the other day and just really wanted some apples. I miss them. So I bought a few (organic, it's important!) apples and brought them home just expecting to eat them as is. Last night I realized that the apples deserved much more than that. And that's exactly what I gave them... and myself. Chocolate covered caramel apple ice cream, can you say yum!? Mmm. Make this now! Chocolate Covered Caramel Apple Ice Cream
serves 1-2
3 frozen bananas
1/2 cup dates
1 teaspoon hemp seeds
1 teaspoon carob
1 apple, cut into small pieces
Cinnamon
Blend together bananas, dates, and hemp seeds in your food processor or blender. Remove 3/4 of the ice cream from blender and place in cups, bowls, or whatever you desire. Add carob to remaining ice cream in blender. Blend together. Set aside. Place 3/4 of the apple pieces inside serving dish of choice. Add layer of chocolate ice cream. Top with remaining apples and cinnamon. Serve, enjoy!
