Double Chocolate Banana Ice Cream

Chocolate is pretty great, right? I make a lot of recipes involving chocolate. I don't plan for it to happen that way, but it does and I have yet to have any complaints. So I'm coming at you today with another chocolate recipe. This one is great. Well they're all great but this one is something special. It's so great that it happened to be my post workout lunch the other day. Ice cream for lunch, yes. That's one thing that I love love love about a plant based diet. You can eat a huge bowl of chocolate banana ice cream and do nothing but nourish your body by eating it. It's so awesome!! Honestly, all vegan ice creams are superior to "normal" dairy ice creams. There's really no comparison. You can have this bowl of heaven pictured here made with nothing but compassion and chocolate or you can have a bowl of dairy ice cream filled with sad dairy industry related things and tons of chemical additives. The choice really isn't hard at all!

This ice cream has a special treat in it. I made some easy four ingredient cookies the other day and was going to post them alone to share. But they didn't look as good as they tasted so I tossed a few in some banana ice cream and made a good thing something even better. I'm thankful for recipe mistakes like that because it gives me the potential to step up my game and bring things like this to the table instead!

Double Chocolate Banana Ice Cream

serves 1-2

Chocolate Cookies:
1 cup oats
1 large banana
3 tablespoons cacao powder
1 tablespoon maple syrup

Preheat oven to 350F degrees. Mix together all ingredients. Scoop out medium sized cookies onto parchment paper lined cookie sheet. Bake for 15-20 minutes. Remove from oven. Set aside.

Chocolate Icing:
1 cup dates
1/4 cup maple syrup
2 tablespoon cacao

Banana Ice Cream:
3 frozen bananas
1/2 cup almond milk
2 tablespoons cacao powder
4 ice chocolate cookies

Blend together bananas, almond milk, and cacao powder until smooth. Add in cookies and blend again. Remove from blender. Top with broken up pieces of cookies, left over chocolate icing, and peanut butter if desired. Serve, enjoy!
