Almond Cups with Chocolate Pudding - Vegan

Who remembers these chocolate almond butter cups? To this day I still think that they're my favorite recipe that I've created. These are a close second. I love sweet dessert type things. So good. What's even better is when you can make those sweet dessert type things with nutritious foods! The chocolate pudding in the center of these is a rich dark chocolate. So smooth, so creamy. You'll go crazy for it. You could even eat it by itself like I may or may not have done with a whole batch of it today. These things happen and sometimes you need to eat a whole bowl of chocolate pudding. Other times you'll need to pair it with almond cups and cashew cream. I recommend the second option, of course. But you can do whatever your heart desires.

Whatever you choose, I can guarantee three things.

Almonds. Chocolate. Happiness.

Almond Cups with Chocolate Pudding

makes 20-24 cups

Almond Cups:
2 cup dates
2/3 cup oats
1/2 cup almonds

Blend together all ingredients. Roll into small balls and press holes into the centers. Set aside.

Chocolate Pudding:
1 avocado
1/2 cup dates
1/4 cup + 1 tablespoon cacao powder
1/4 cup cashew milk
1 tablespoon coconut sugar

Blend together all ingredients until smooth. Fill almond cups.

Cashew Cream:
1/2 cup cashews, soaked
1/4 cup water
Juice from 1 lemon
Pinch of himalayan salt
Drop of vanilla

Blend together all ingredients until smooth. Drizzle on top of almond cups. Serve, enjoy!

Store in refrigerator for up to 7 days.
