Potatoes are a very important part of my life. I eat them almost every single day. Lately I've been into Japanese Sweet Potatoes. So amazing that I can't even express my love for them. But you know what, all potatoes are pretty great. What makes them even greater is that there are so many things that you can do with potatoes. Think of all of the possibilities! One of my favorite things to do is to make them into fries. I just come home from work and can have these prepped and baking in no time. Makes me happy!
I love eating whole plant foods. I think that I say this in almost every post that I make. But I mean it 100%. I am very passionate about it and the reason that I'm always rambling on about it is because it is so freakin' awesome and I want everyone to experience it! Nothing makes me happier than removing a fresh batch of sweet potato fries from the oven. Except maybe a banana smoothie or something along those lines. But you know, it's hard to compete with something like that. Anyways, make these potatoes. Let them nourish your cells and give you tons of energy while tasting crazy good at the same time. Lemon Herb Potato Fries
serves 2-4 small servings
3 medium/large potatoes of choice
1 lemon
1-2 tablespoons basil
1-2 tablespoons oregano
Preheat oven to 450 degrees. Wash and slice potatoes into thin slices. In a medium sized bowl add in juice from lemon and potatoes. Coat potatoes with lemon juice and sprinkle basil and oregano on potatoes. The amount of basil and oregano will depend on how large your potatoes are and how much basil and oregano you desire. Place potatoes on parchment paper lined baking sheet. Bake for 35-40 minutes, until potatoes are soft. Serve, enjoy!
