Things are really heating up here in western PA. I'm sitting outside writing this right now. I just got done drinking a icy green smoothie and spraying the hose around the yard for Roxy to play in. Warm weather makes me so so happy. I can't even begin to express how much I love it.
With the warm weather here I can finally eat frozen treats and not freeze while doing so! Yay for that, right?! I've made tons of blizzard desserts in the past but it's been a while since my last one. I know that a lot of you really enjoy them (as do I) and I've been slacking!
This morning I figured that it was time to make another one so I asked Darrin what kind to make. There are so many possibilities that I couldn't choose on my own so I went with his first idea; chocolate covered banana. Perfect!
This blizzard is so easy to make with just 3 simple ingredients. Yes three! You know how I'm all about simple recipes. It's important to me. But it's also important not to sacrifice taste which definitely wasn't done here. This tastes like whipped banana soft serve and bites of chocolate dispersed throughout. So good!! The best way to kick off a new summer of delicious blizzard recipes!
Chocolate Covered Banana Blizzard
serves 1-2
5 frozen bananas
1 fresh banana
1 tablespoon almond milk
1/4 cup of crushed Nibmor chocolate (or your preferred chocolate)
Peel fresh banana and slice three pieces. Melt chocolate and dip banana slices in chocolate. Place in freezer to set up. Drizzle remaining chocolate around the inner edge of your glass. I used a 1 liter jar for this. Blend together remainder of fresh banana with frozen bananas and almond milk until smooth. Pour banana ice cream into your glass. Top with banana slices and coconut sugar if desired. Serve, enjoy!!
