Earlier this week I shared this recipe with you guys. I wanted to keep the chocolate and banana theme going strong so today we're going to visit the land of chocolate chip banana cookies!
Rarely do I ever make baked goods to share on here. I just don't enjoy them as much as my raw ones usually. But every once in a while I attempt some baked foods. It's so funny how much my tastebuds have evolved over time and I wouldn't have it any other way. I love the way that I eat because it makes me feel amazing and gives me the energy to go throughout my days in a positive way.
Let's be honest though, as long as we're eating plant based vegan foods, that's all that matters at the end of the day. Right?!
Chocolate Chip Banana Cookies
makes 10-12 cookies
Cookies: 2 bananas
1/2 cup buckwheat groats
2 tablespoons maple syrup
3 tablespoons cacao nibs (or chocolate chips)
Preheat oven to 350 degrees. Blend together bananas, buckwheat, and maple syrup. Add in cacao nibs and stir. Spoon out batter onto cookie sheet and bake for 10-12 minutes. Remove from oven and let cool.
Icing: 1 cup dates
3-4 tablespoons water
3 tablespoons cacao powder
Blend together all ingredients until smooth. Spread evenly onto cookies. Top with more cacao nibs, if desired.
