I'm working on a project which is why I've been absent from here this week. It's a yoga project! I'll be sharing this project with you guys in January, if not before then. I am so excited. But I don't want to totally neglect my recipes and stuff so I'm here today with a truffle recipe. Okay, these truffles are insane. Seriously. The texture is so smooth and rich that they'll leave you saying "are these really vegan?!" And yes, they absolutely are!
Not only are they free of animal products, they're also only 7 delicious ingredients. You just have to toss everything in the blender, roll them into cute little balls, and try not to eat them all while doing so!
Ginger Spice Truffles
makes 8 truffles
1 cup dates
1/4 cup walnuts
2 tablespoon cacao powder
1/2 teaspoon nutmeg
1/4 teaspoon ginger, minced
1/4 teaspoon cinnamon
1 tablespoon coconut sugar
Add all ingredients except coconut sugar to blender or food processor. Blend together. Roll into medium sized balls. Roll balls in coconut sugar. Serve, enjoy!
Store in refrigerator for up to 7 days.
